Approvals somehow

Hi folks,

I have a general need to create an auditable approvals or sign off process for individual list items. This has to be able to stand up to some scrutiny, and be generally hard to falsify.

In regular sharepoint I would use the request sign off flow, but it looks like I can't do this via lists within forms.

What are the ways people are using to get completely auditable (i.e who did what and when) sign-offs that can't be falsified by any user that has access to the list?

    I would solve that requirement by new sign status/flag columns, visible sign buttons for the right persons (person probably as well as new column) and setting permissions on the items in the background to make sure nobody else can change the item during that time: Set single item permissions using skybow Triggered Actions – skybow Portal
